Cooking Instructions:

It is mainly used in the preparation of sushi. To prepare sushi rice at home, follow the steps given below:

· Wash and soak 1 cup Japanese rice in 1 ½ cups of water for few minutes. Cook the rice in the same water till completely done and when still warm, add 1 tbsp rice vinegar, ½ tbsp sugar, salt and konbu. You may add sake which is part of the original recipe.

· Toss or mix gently ensuring that the grains don't break. Use this flavoured rice as filling for sushi.

· Use sushi rice to make sushi rice rolls.

· As a variation, use sushi along with cucumber and dill to make a refreshing salad

Sushi Rice is mostly commonly steamed, seasoned with rice wine vinegar, salt and sugar, then used in sushi rolls. It also works beautifully in risottos and rice puddings.
