Cooking Instructions:

In a deep pan, bring enough water along with some salt to boil. Add the required amount of Arborio rice. Cover tightly and simmer (cook over low heat) for about 20 minutes or until the rice is tender "al dente" (firm to the bite). Stir the rice occasionally while it is cooking.

Artichokes, asparagus, beets, crab, mushrooms, Parmesan cheese, peas, saffron, shallots, shellfish, truffles, veal, wine.

Arborio Rice is used primarily in Risotto dishes, which often reflect the seasons., In Spring use Baby Vegetables, in Summer Tomato and Basil, in Autumn Wild Mushrooms and in Winter Seafood. Serve as an entree or side dish.

It is a good source of iron (around 2.75 mg per 1 cup cooked rice).

Arborio is an Italian White Rice grown in the Piedmont and Lombardy regions of Italy and also in California. Arborio absorbs more liquid than other Rice thus requiring additional liquid to be added throughout the cooking period.

Arborio rice is an Italian short-grain rice. It is named after the town of Arborio, in the Po Valley, where it is grown. When cooked, the rounded grains are firm, creamy, and chewy, due to their higher amylopectin starch content; thus, it has a starchy taste but blends well with other flavours. It is used to make risotto, although Carnaroli, Maratelli and Vialone Nano are sometimes used to prepare the dish. Arborio rice is also used for rice pudding.

Arborio is the only rice that should be used to prepare risotto. However, varieties of rice like Vialone Nano and Carnaroli are more commonly used when Arborio is not affordable or available. Like pasta, arborio rice is prepared al dente, which means that it should be slightly firm to the bite - a degree of doneness that might seem underdone in ordinary white rice.
